As I explained in my last post, Celiac disease (CD) is much more prevalent than many doctors and patients realize. I also revealed the research that shows most people with CD have silent CD. For anyone that has struggled or is struggling with a dietary lifestyle change, such as going gluten-free it’s not always an easy task. Gluten is hidden in a variety of things; anywhere from condiments to meat-glue to alcohol. If you have gluten intolerance like I do, you will have nutritional deficiencies. Nutritional deficiencies can lead to a wind up of the immune system thereby worsening autoimmunity and/or the devlopment of additional diseases. Often only iron, sodium and postasium levels are checked on routine blood tests.
